We are in a cornbread phase right now! We are enjoying our yellow, blue, and green corneals.
We use Barton Springs Mill cornmeal in fresh homemade cornbread. I’ve been baking about one loaf per week. We modified a recipe from Bless This Mess so it doesn’t require cast iron or butter and we really love the flavor and texture of this bread!
- We soak the cornmeal in 1 cup of water for a few days before we bake to soften the meal.
- We use 1/3 cup of olive oil instead of butter.
- We use 1/3 cup of sour cream instead of 1 cup of milk.
An added bonus to this local Austin-area mill is that once you take the metal tab off the package (trash it since it’s metal coated in paper, though I may try and soak the paper off the metal on the next one), the package is compostable!
This is a great kid activity. My 7 year old loves to help.
