Banana walnut chocolate chip muffins are my favorite way to use older bananas. My husband likes to make a banana milkshake with them. I haven’t found that bananas freeze well for me or I haven’t done it correctly, they’re snotty and then they have a ton of moisture in them when I use them. So I prefer to make muffins!
Yes, you can make bread but pretty much any muffin form will get my kid to eat something and then of course if you put tiny chocolate chips, in even if it’s just a bit, he’ll definitely eat them. I pretty much put walnuts in all my muffins, I don’t like pecans and I like the little bit of extra protein and healthy fat plus the crunch. I just add 1/2 cup of walnuts to recipes without nuts and this particular banana nut muffin recipe used 1 cup of walnuts. The recipe did not include chocolate chips so I added in 1/4 cup of mini chocolate chips to make them more enticing for my boys.
